Hi all!

I’m back with another what-I-ate-today post! Unfortunately it didn’t turn out as exciting as I’d hoped.. I ended up having some stomach issues, and really didn’t feel like cooking… so here’s a lazy day of eating ๐Ÿ™‚ Also, I’m adopting a more plant-based diet, and this day of eating happened to be vegan. I do still eat animal products occasionally, maybe twice a week, but have cut WAY down for a bunch of reasons – but that’s a whole other blog post ๐Ÿ˜‰

Let’s dive in, shall we?

Started this morning with ~700 mL of water and one lemon. Getting a good amount of water in first thing in the morning has lots of benefits: rehydration after sleeping, gives you more energy via hydration, gets things “moving,” and adding in a lemon has lots of good digestive effects ๐Ÿ™‚

Breakfast:

instant-heart-healthy-blueberry-oatmealWell, here’s a picture of what I had because apparently I didn’t take a real picture of it! I’ve been a little off for the past week, and I guess my brain wasn’t quite working this morning. Anyway, I love this oatmeal from Trader Joe’s, mostly because I love anything blueberry, and it’s warm & filling & delicious. I added a sliced banana on top, and made it with cashew milk ๐Ÿ™‚

 

 

Lunch:

smoothie

I hadn’t felt well most of the week, so to take it easy on my digestion (because I’m a delicate flower) I made a big ol’ smoothie for lunch. This one had:
– 1 cup water
– 1/2 cup unfiltered apple juice
– 1 tbsp chia seeds
– 2 big handfuls of mixed salad greens
– 1 cup mango
– 1 cup pineapple
– ice

Admittedly, this one came out a little salad-y, but hey, gotta get those greens in right?

Afternoon snack:

Okay so it’s not really a “snack,” because it was just a coffee… but I wanted to share a dairy alternative to creamer – coconut cream! Personally I like the one from Trader Joe’s better because it’s much thicker, but this isn’t bad either. The one from TJ’s solidifies in the fridge, whereas this one still has a half-and-half consistency even in the fridge. I made an 8 oz coffee and had 2 tbsp of this with 1 teaspoon of coconut sugar. Coconut things have been my thing lately.

Dinner:

I love love love using my slow cooker. I’m a pretty terrible cook, but it’s pretty hard to mess up a crock-pot meal (although I have done it….). I had some sweet potatoes to use up, and foundย this recipeย at pinchofyum.com for sweet potato lentils. It’s super easy to make and only has a few ingredients. Although my husband wasn’t a fan, I thought it was super warm and comforting. I adore sweet potatoes (he hates them)! It made about 6-8 servings, and I had about a cup of brown rice topped with a cup of this and some broccoli. And then I had it for pretty much the rest of the week….

Dessert:

Sometimes after dinner, I get those sweet-cravings.. to keep them under control, I find dark chocolate works fantastic! No, it’s not the same as a cupcake obviously, but it really curbs the craving. This one is from Trader Joe’s and is 85% cacao… so yeah, super dark. I keep it in the freezer… I think it makes it a little less “intense” ๐Ÿ™‚

 

And now for the life updates…

If you couldn’t tell by my lack of posting and how frazzled this blog post kind of was, I’ve been SUPER stressed out lately. Packing up & selling all our stuff, preparing for our trip to Europe for 5 weeks, and then moving across the country, all while trying to figure out what exactly I want my health coach practice to look and be like, and figuring out how I’m going to handle that while I’m dealing with all the other stuff… yeeeeeah, a little crazy!

However, I do believe in fate, and what is supposed to happen will happen. I was presented with a new opportunity in my biz that I am going to be pursuing, and will be taking me in a completely different direction than what I planned. I feel though, that this new direction is where I really want to go and I will feel more authentic with my practice. I’m so grateful for my education in health coaching and my school is awesome, but the high end price tags they recommended for the programs weren’t sitting well with me. All I want to do is help people change their lives so they can look and feel their absolute best, with a focus on healthy bodies AND minds. This opportunity, though probably super surprising to some, will allow me to do more of what I love and help more people, which is my goal. Money should never stand in the way.
